BBQ Chicken Pizza

I can honestly say my favorite food is pizza, I LOVE IT!

BBQ Chicken Pizza has become one of my staple recipes to make at home. It is simple yet delicious. The hubby really loves this one!

You can use a store bought dough if you are short on time, but making homemade pizza dough at home is simple!

BBQ Chicken Pizza

2 chicken breasts, chopped
1/4-3/4 cup of favorite BBQ sauce (it's your preference to how much sauce you like on your pizza)
1 small onion, diced
1/4 cup Parmesan cheese
1 cup of shredded pizza blend of cheese (it's up to you, make it more cheesy if you want!)
Pizza dough

Prep toppings:

Preheat over to 400 degrees.

Preheat a non-stick skillet of medium high heat. Add in your chopped chicken breasts and season with salt and pepper. Brown chicken on all sides, after you flip the chicken once, add in your diced onion. Cook until chicken is cooked through and onions are softened.

For a thinner crust use a cookie sheet and for a thicker crust use a pizza pan. Spread the pizza dough out on a greased pan.

Now is when you will spread the BBQ sauce on the pizza dough. I like sauce in every bite, but not to be overwhelming, so I will usually use between 1/3 cup-1/2 cup. Make sure to leave a crust edge.

Distribute the chicken and onions mixture over the pizza dough.

Sprinkle the Parmesan cheese next and then add your pizza blend of cheese.

Bake in the oven for 15-20 minutes, depending on your oven.

Pizza Dough Recipe

2 3/4- 3 cups of all purpose flour
1 package of dry yeast
1/2 teaspoon of salt
1 cup of warm water
2 tablespoons of oil

In a large mixing bowl combine 1 ¼ cups of the flour, the yeast and salt; add warm water and oil.

Beat with an electric mixer with dough hook attachment on low speed for 30 seconds, scraping the bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make moderately stiff dough that is smooth and elastic (6 to 8 minutes total).

Cover and let rise for 10 minutes.

This dough is great for cal-zones. This recipe makes enough for two pizzas. This dough freezes great, so if you aren't making two, just pop it in a plastic bag and freeze if for next time! Just put it in the fridge the day before you want to use it.

I hope you enjoy!

Until next time,

Kara
